Did you know it’s National Nutrition Month? Yup, March is a time to finally get around to that pesky New Years’ Resolution that’s been haunting you since January 2nd. I personally have been slowly working on my nutrition since last autumn, when I happily welcomed my baby girl into the world. I subscribe to the “slow-but-steady” tribe, so I’ve been making little tweaks to my daily routine – cutting down portion sizes, eating more greens, and doing “baby curls” every hour (you know, when you use your baby as a dumbbell… don’t worry, she think’s it’s hilarious!).
I was thrilled when Eat Smart approached me to create a recipe to compliment one of their Eat Smart Gourmet Vegetable Salad Kits to celebrate this healthy month. I picked their Beets and Greens Salad Kit to pair with a Springtime Oat Smoothie. The kit features cooked beets, kale, beet greens, red chard, red cabbage and broccoli, topped with golden raisins, feta cheese and white wine vinaigrette for a sweet, savory and healthy flavor. To be honest, I picked this salad kit because I’m not a kale person and I’m committed to changing that in 2016. Luckily, the Eat Smart Beets and Greens Salad Kit was so scrumptious that I happily downed all the roughage. You have lost this battle, Kale! Here’s my (quite yummy!) smoothie recipe to match…

To make the Springtime Oat Smoothie, add the greek yogurt, grapefruit, and raspberries to a blender. Blend thoroughly and pour into a glass. Pour most of the oats over the top of the mixture in the glass.
Separately add the blueberries and honey to a blender. Blend thoroughly and pour into the glass over the oats. Garnish with oats and enjoy!
