If you have been following along with the blog, then you are well aware that October was National Pizza Month. Yes, awesome. I know. And to celebrate that sacred month of observance, I teamed up with Mama Mary’s® to bring you two sponsored recipe posts: the first was the seasonally appropriate Spicy Harvest Pizza and the second is today’s Mascarpone Rainbow Pizza. You heard me right… Rainbow. Pizza. And yes, I know it’s already November but who said we can’t drag this out a bit longer?!
As previously admitted, pizza is a weekly dinner staple in my household. It’s easy to whip together, everyone loves it, and just plain delicious. Due to it’s popularity under my roof, I have found myself getting more and more creative with the varieties of the heavenly pie recipes. In particular, I have often found myself quickly putting together today’s recipe when unexpected visitors show up. You know, when your mother-in-law ‘pops’ by to drop off that casserole dish she borrowed and then ends up staying for 5 hours? Yeah. All you have to do is grab the pre-made Mama Mary’s pizza crust, make a sweet mascarpone-honey base, plop on whatever fruit you have in the house, and voila! You’ve got yourself a dessert secret weapon, my friends. And it’s so beautiful and delicious, that even your mother-in-law won’t be able to find a flaw. I present to you, the Mascarpone Rainbow Pizza…
Preheat the oven to 425 degrees Fahrenheit. Line a pizza pan with parchment paper. In a small mixing bowl, combine 1 cup of mascarpone cheese and 1/3 cup of honey. Mix together with a spatula until a smooth, creamy consistency is formed.
Place the Mama Mary’s Whole Grain Pizza Crust on the parchment paper lined pan. Brush the crust edges with 1 tablespoon of softened butter. Then dust the buttered edges with 1 tablespoon of sugar. Spread the mascarpone-honey base evenly on the pizza crust.
‘Decorate’ the pizza with 2 to 3 cups of sliced fruit. Specifically, I recommend you pick up some Dole® Pineapple for the pizza. Make sure to scroll to the bottom of the post for details on how to get special coupons for both Dole Pineapple and Mama Mary’s products.
Place in the oven and bake for approximately 10 minutes.
Remove from the oven and let cool fully (this will allow the melted cheese to harden a bit and make for easier serving). Enjoy!
