Unless you are living under a rock, then you know that this week marks the official ‘Back-to-School’ season. And with the season comes the onslaught of hungry children… hey, who doesn’t build up an appetite with tons of learning and socializing? It is also an easy time to fall into a monotonous routine of afternoon snacks: packaged processed food, rinse, repeat. So, in the hopes of inspiring a more wholesome after-school habit, I have teamed up with a lovely brand to bring you a delicious snack alternative. Using Success® Jasmine Rice, I have created a recipe that is sure to make every member of the family happy – Avocado Jasmine Rice Balls, baby! This is a snack I like to treat my family to every now and then because they are pretty easy to make and can be tailored to the taste buds of a discerning crowd. In particular, I was thrilled to team up with Success® Rice since their products are so convenient to use. They are the original no measure, no mess boil-in- bag rice that cooks perfectly every time. Ready in 10 minutes, pre-measured portions, gluten-free, non-GMO, and featuring no additives or preservatives, it really is a great option for an afternoon snack. Now, you can use pretty much any type of rice for this recipe, but I chose the Success® Jasmine Rice since it has sweet buttery fragrance, silky, smooth, white grains. Add that goodness in with sharp cheddar cheese, fresh avocado, ginger, and panko breading, and you’ve got one heck of a treat, my friends. So let’s get started on the yumminess… Prepare 1 bag of the Boil-in-Bag Success Jasmine Rice according to the directions on the box. Once the rice is done, transfer it (while it is still hot) to a medium size mixing bowl. Add 1/2 cup of shredded sharp cheddar cheese to the bowl and mix until the cheese has melted. Let cool until it is no longer steaming.
In a small mixing bowl whisk two large eggs fully. In a separate small mixing bowl, thoroughly combine 1 tablespoon of powdered ginger and 1 cup of panko. Set both bowls aside. Pour 2 tablespoons of olive or canola oil into a skillet pan and cook over medium heat. Leave over the heat while the balls are being prepared. Place a small amount of the rice into the palm of your hand and then add an avocado cube on top. Cover the cube with more rice and then form a ball with your hands.
Dip the rice ball in the egg and then immediately place in the panko bowl, making sure the ball gets completely covered in the breading.
Then, place in the pan with heated oil. Repeat until all the rice and avocado has been used to create balls. Grill the balls in the heated pan until all sides are golden and crispy (approximately 5 minutes). Remove from the pan and serve warm with dipping sauce. Enjoy!
