Father’s Day. A day to celebrate the special men in your life. A day to spoil dad, your partner, the brother, or friend that is an expert at monkey impressions and piggy-back rides. I personally can’t think of a better way to celebrate this exemplary man than with the ultimate, the coup de gras of all foods… bacon. I’ve teamed up with Wright® Brand Bacon from HEB to come up with a recipe to personally spoil my husband: the man that makes my heart skip a beat every time he sings the theme song to “Thomas the Tank Engine.” So, this Father’s Day, I’m making him Bacon Ramekins.
Bacon Ramekins, you say? What the heck are those?! Well, it’s a super easy way to serve bacon in a creative way. Essentially, we are going to make completely edible bowls out of bacon. And since I am now a native Texan, what better ingredient than Wright Brand’s Naturally Hickory Smoked Bacon?! Hearty, protein-packed, thick sliced, naturally smoked, and hailing from Texas, Wright Brand Bacon has it all. The best part about these edible ramekins is that you can fill them with Dad’s favorite breakfast items: eggs, cornbread, veggies, you name it. Today, I’m going old school with scrambled eggs and cheese. Hearty through and through. And don’t be intimidated by the fantastic look of these babies, they’re actually super easy to make. So let’s get started…
Step One: Show me the bacon!
Head to your local HEB, stand in the middle of an aisle, and start screaming “Show me the BACON!” Okay, this probably isn’t the best idea. But hey if you’re feeling sassy, then you do you. Otherwise, just go to the meat aisle at HEB and grab yourself some Wright Brand Bacon. You have your choice of Naturally Hickory Smoked or Applewood Smoked, so knock yourself out.
Step Two: Get your weave on!
Preheat the oven to 375F. Take out 8 thick strips of Wright Brand Bacon (I’m using Naturally Hickory Smoked for this recipe). Trim about 2 inches off their ends. Lay out 4 parallel strips and then weave in another 4 strips perpendicularly.
Step Three: Bake
Place the weaved Wright Brand Bacon over a 4 inch round cake pan or one cavity of a large muffin tin. Gently push the bacon into the pan until it’s molded to the shape. Bake for approximately 25 minutes or until crispy. Note: I’d recommend placing the pan or muffin tin on top of a cookie sheet, to catch the excess bacon grease. Remove and let cool.
Step Four: Enjoy
Fill the Wright Brand Bacon Ramekins with scrambled eggs topped with cheese. Or fill them with another of Dad’s favorite breakfast food. Plate it and add a few other favorites to the tray… personally, I think coffee, a scone, and a dram of scotch can’t lose. Now, bask in the glory of the amazingly creative and delectable dish you’ve made for Father’s Day!
And as the last photo indicates, a true Father’s Day breakfast isn’t complete without chubby baby hands stealing blackberries off your plate.
