Summer is coming to a close, school is about to begin, and a cool breeze is lingering in the air. That can only mean one thing… it’s Mac & Cheese season! Yes, as vacations end and the real life grind resumes, you’re going to need some delicious, simple meals up your sleeve. I have just the recipe to shake off that summertime sadness, Simple Skillet Rotini Mac & Cheese. Oh yeah! With the help of DaVinci® Rotini, this meal is easy to create and will certainly put a smile on everyone’s faces. Let’s get cooking!
If you’ve ever looked up a skillet mac & cheese recipe, then you know that they are often complicated. Most call for at least an hour of prep and cook time before it’s even ready to be served, let alone the army of pots and pans they require you to use. I’ve revamped the traditional recipe, taken it down to its delicious basics, and drastically reduced your post-dinner dishwashing load. Hey, I am a working mom… efficiency is my best friend! Let’s walk through the recipe together. Preheat the oven to 400F. Then bring 2 quarts of water to a boil and cook ½ pound of DaVinci® Rotini pasta for 9 minutes. Drain and set aside.
DaVinci® pastas are a great staple to keep in your pantry. Made with 100% durum wheat semolina, the quality and flavor are perfect. Plus, DaVinci® pasta comes in 50 varieties that are all made in Italy, so you know that it’s authentic pasta. Okay, back to the recipe… in a skillet, combine 2 tablespoons of butter, ½ cup of bacon pieces, ½ of a yellow onion (diced), and 1 tablespoon of fresh oregano. Heat on medium until the butter is melted and the onions are tender.
Turn off the heat and mix in ½ cup of whole milk.
Then thoroughly mix in ¼ cup of each cheese.
Add the drained DaVinci® Rotini Pasta to the skillet and gently mix with the ingredients.
Make sure the mixed pasta is spread evenly throughout the skillet. Then sprinkle the remaining ¼ cup of each cheese on top and place in the oven. Bake for approximately 15 minutes.
Remove, let cool slightly, and serve hot. Enjoy!
