Tis’ the season… to bake! The cool air has rolled in on the wind, the leaves are crunching beneath feet, and the oven is about to get fired up. There is seriously nothing I love more than baking in the colder months. And there is nothing I love more than baking pie. With the help of Pillsbury Rolled Pie Crusts from Sam’s Club, I have created an homage to everything that is wonderful during the season. Bourbon, sweet cheese, pumpkin, and buttery leaf-shaped crust. Who wants a slice of my American Harvest Pie?!
American Harvest Pie

Admittedly, pie is a difficult dessert to whip up. In particular, the crust often serves as my kryptonite. I usually mess up the ingredients, create a crust that tastes sub-par, or simply burn it to a crisp. That is why I absolutely love Pillsbury Rolled Pie Crusts. They are literally ready to roll over a pie plate and made to perfection, eliminating the guesswork out of creating the perfect crust. All you have to do is pop on over to your local Sam’s Club, pick up a box of Pillsbury Rolled Pie Crusts (they come in a pack of 6!), and you’re ready to get your bake on! But in case you need a bit more hand-holding, let’s walk through the pie-making process together.
First, you will want to remove the Pillsbury Rolled Pie Crusts from the freezer to defrost and bring to room temperature. Also make sure to preheat the oven to 425°F and grease a 9-inch pie plate. Then in a large mixing bowl, thoroughly mix 15 ounces of pumpkin puréeand 8 ounces of mascarpone cheese.
Next, mix in 2 large eggs.
Then mix in ¾ cup of brown sugar and ¼ cup of bourbon.
Lastly mix in ½ teaspoon of salt, ¼ teaspoon of nutmeg, ¼ teaspoon of cloves, and ¼ teaspoon of cardamom. Set aside.
Unroll one of the Pillsbury Rolled Pie Crusts that you picked up at Sam’s Club on a floured surface and sprinkle the top with flour. This is a necessary step when you’re making a sweet pie!
Then place the dough over the top of the pie plate and press the crust firmly against the side and bottom.
Next, pour the batter into the pie plate and spread evenly with a spatula. Place in the oven and bake at 425°F for 15 minutes. Then reduce the heat to 350°F and continue to bake another 30 minutes (or until cooked throughout).
While the pie is baking, prep the crust leaves. Roll out the second Pillsbury Rolled Pie Crust on a floured surface. Use leaf cutters to cut the shapes out of the dough. Place the leaves on a parchment lined cookie sheet and brush with egg yolk.
Once the pie is finished baking, remove from the oven and let cool. Raise the heat to 425°F and bake the leaves for approximately 8 minutes. Remove and let cool. Arrange the crust leaves on top of the pie. All that is left is enjoying a heavenly slice of American Harvest Pie!
