Fresh, tangy, and packed with herbs, this easy chimichurri is the kind of versatile sauce you’ll want to have on hand all season long — perfect for drizzling on just about anything off the grill.
Chimichurri is one of those sauces that instantly jazzes up everything else on your plate. It’s a simple mixture of olive oil, sherry vinegar, lemon juice, aromatics and lots of fresh herbs, mixed together to create a briny, slightly thick sauce. It’s delicious sprinkled over grilled chicken or steak, used as a marinade (my grilled chimichurri chicken thighs are a family favorite), or served with roasted vegetables. Any way you use it, it adds a big flavor with very little effort.
What you need to make chimichurri sauce

- extra virgin olive oil: Provides a rich, smooth base that preserves the flavor of the sauce.
- Sherry Wine Vinegar and Fresh Lemon Juice: The combination of the two gives the sauce a bright, balanced spiciness.
- Fresh Lemon Juice: Provides bright acidity, enhancing the overall flavor.
- Garlic Cloves and Onions: Garlic for chopping, onions for a mild, slightly sweet onion flavor.
- Salt, pepper and crushed red chili pieces: Season the sauce and add some heat.
- Fresh parsley, cilantro, and mint: A fresh, herby combo that makes the sauce aromatic and delicious.

Step-by-step instructions
Step 1: Blend the chimichurri. In a food processor, combine the olive oil, vinegar, lemon juice, garlic, onion, salt, pepper, red pepper flakes, parsley, cilantro, and mint. Beat until the herbs are finely chopped and the mixture is well combined but still holds its texture. Combine the remaining herbs in two separate bowls, pureeing after each addition until almost smooth.
Pro Tip: Pulsing the food processor every once in a while instead of running it continuously keeps the herbs from turning into a paste and keeps the sauce’s thick texture.

Step 2: Serve or refrigerate. Cover and chill until ready to serve. The sauce keeps well in the refrigerator for up to 3 days.
