Thanksgiving is going to look a lot different this year. To keep our loved ones and ourselves safe, most of us will not be celebrating the holiday with extended family. That’s certainly the case for myself and it is kind of a bummer. Hopefully, this is the first and only year we all have to hunker down for the season, but while we are, let’s add a bit of extra magic to the festivities. I, for one, will be going all out with a delectable Thanksgiving for my little family. With the help of Ibotta, I will be stretching out my yoga pants but not my wallet to bring a bit of decadence to the holiday with my Cranberry Spice Baked Brie recipe.
I am particularly grateful to be teaming up with Ibotta on this recipe post, since there is a greater purpose behind it. The company knows what a hard year this has been for everyone and understands that many are struggling. So starting in November, Ibotta is partnering up with Walmart and Feeding America to give away free Thanksgiving dinners (while supplies last). Anyone using the Ibotta app and new browser extension (for online grocery pick-up and delivery orders) can receive 100% cash back on everything they need for a Thanksgiving Dinner for a family of 5. Pretty amazing, right?! Here’s what I was able to haul and save on through Ibotta from a recent trip to Walmart…
The bounty included a Butterball Boneless Turkey Roast, Campbell’s Cream of Mushroom Soup, French’s Crispy Onions, McCormick Gravy, Great Value Green Beans, Idahoan mashed Potatoes, Great Value Cranberry Sauce, Great Value Stuffing, and a 2 Liter bottle of Coke. This is practically all you need to make a fabulous Thanksgiving Day dinner. If you’re feeling particularly crafty, then you’ll want to try out my recipe for Cranberry Spice Baked Brie. Using the Great Value Cranberry Sauce from this list, it is surprisingly simple to make.
Cranberry Spice Baked Brie
Time: 35 min.; Serves: 4-6
INGREDIENTS:
DIRECTIONS:
The Cranberry Spice Baked Brie is a deceptively easy recipe that is sure to be the centerpiece of your holiday festivities. Let’s walk through it together! Preheat the oven to 400°F and line a baking sheet with parchment paper. Roll out one of the puff pastry sheets and place the whole wheel of brie in the center.
Spread the cranberry sauce, sprinkle the allspice, and place the pumpkin seeds all on top of the cheese.
Fold the corners of the puff pastry tightly over, around, and under the cheese until completely enveloped. What I love about this recipe is that you don’t have to be a baking expert to pull it off. Don’t worry if the dough isn’t perfect, just have fun!
Roll out the second puff pastry sheet and use cookie and/or fondant cutters to create festive designs. This is a great step to let the kids join in on the holiday fun! Lightly wet the back of each cutout and place on top of the wrapped cheese for decoration.
Brush the pastry with egg yolk and place in the oven.
Bake for approximately 20-25 minutes. Remove and serve hot!
Make sure to use the Ibotta App or new browser extension to get cash back on all your Thanksgiving prep. And if you are able, please consider donating to Feeding America. Wishing you and yours a happy and safe Thanksgiving!
All offers are available starting in November, while supplies last. Check your app for details.
