The holiday season is upon us, so you are going to need some killer entertaining recipes in your hosting arsenal. Today, I have a unique and delicious breakfast recipe that is sure to make even your visiting Mother-in-Law crack a smile. It is time to sink your festive teeth into my Kefir Streusel Muffins!
Kefir Streusel Muffins

On a difficulty scale of 1-10, I would give this recipe a solid 4. It is not a particularly hard recipe to whip up, but just in case you need a little more guidance, let’s walk through it together. Preheat the oven to 425°F and grease a muffin or mini bundt pan. Then in a large mixing bowl, thoroughly combine 3 cups of cake flour, 3/4 cups of granulated sugar, 2 teaspoons of baking powder, 1 teaspoon of cinnamon, 1/2 teaspoon of baking soda, 1/4 teaspoon of salt, and 1/4 teaspoon of allspice.
Next, mix in 2 large eggs, 1 cup of Lifeway Kefir, 1/4 cup of grapeseed oil, and 1 teaspoon of vanilla extract. Streusel muffins traditionally feature buttermilk as an essential ingredient. That is actually why Lifeway Kefir works so well as a replacement. The addition of the decadently rich kefir adds a uniquely complex flavor to the muffins that gives it an undeniable gourmet quality. Seriously, your holiday guests are going to scarf these babies down in seconds!
To create the streusel, in a small bowl thoroughly combine 1/2 cup of cake flour, 1/2 teaspoon of cinnamon, the 1/4 cup of brown sugar, and 2 tablespoons of melted butter. Then fold the streusel gently into the muffin batter with a spatula.
Pour the batter evenly into the baking pan and place in the oven. Bake for approximately 10-12 minutes (or until cooked through).
Remove from the oven and let cool completely. Dust with Confectioner’s sugar. All that is left is eating…
