Nestled in the heart of Hammond Louisiana, Lauren Carroll and her sweet daughter Emma Kate spent their Sunday evening showing me how she makes her famous homemade cinnamon apple pie. Her beautiful farmhouse-styled home is surrounded by towering oaks and a mini chicken farm. Fresh eggs and homemade pie crust are a staple in their household. Homemade Apple Cinnamon Pie

Homemade Cinnamon Apple Pie

INGREDIENTS:

Pie Dough

  • 2 1/4 cups flour
  • 1 tbsp sugar
  • 1 tsp salt
  • 12 tbsp unsalted butter (cubed and chilled)
  • 6 tbsp ice-cold water

Filling

  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 3 tbsp flour
  • 1 tsp cinnamon
  • 1/4 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 6 cups thinly sliced apples
  • 1 tbsp lemon juice
  • 1 tbsp butter
  • 1 egg white
  • Sugar in the raw to sprinkle on crust Homemade pie crust

DIRECTIONS:

  1. To make the dough, whisk the flour, sugar, and salt in a bowl. Using your fingers, cut butter into flour mixture, forming pea-size crumbles. Add water, and work dough until smooth but with visible flecks of butter. Divide dough in half and flatten into disks. Wrap disks in plastic wrap and chill for at least 30 minutes before using.
  2. Preheat oven to 375 degrees F and line a pie pan with bottom crust.
  3. In a small bowl, combine the sugars, flour, and spices.
  4. In a large bowl, toss apples with lemon juice. Add sugar mixture, toss to coat.
  5. Fill the pie crust with apple mixture and dot with butter.
  6. Roll out remaining pie dough and feel free to slice and lattice your pie crust, add braids, or make leaf cut outs. Be creative and have fun!
  7. Beat the egg white until foamy, and brush over dough gently. Sprinkle with raw sugar for an extra crunch, and cover edges loosely with foil.
  8. Bake for 25 minutes. Remove foil and bake 20-25 minutes longer until crust is golden brown and the filling is bubbly and apples are tender.
