I consider myself a responsible, healthy person. Despite being a working mom and thus an overall exhausted human being, I always prioritize exercise and don’t overindulge in sweets. You’re just as likely to catch me riding a unicorn than you are with a fast food burger in my hand. Regardless of all of this, I am a terrible, hypocritical example to my kid. Why? Because I rarely eat veggies. It’s a childhood stubbornness that I just can’t shake. So I’ve teamed up with Dave’s Killer Bread to break this bad habit and add a bit of delicious greens to my daily routine with this Killer Technicolor Veggie Sandwich recipe.
Yes, it’s true. I don’t like vegetables. Okay, that’s a bit of an exaggeration. If it’s not fried or drenched in ranch dressing, I’m like a tortured toddler being forced to take medicine. But I do love me a hearty, whole grain sandwich. And since I’m determined to set a good example for my daughter and break the viscous cycle of green prejudice, I created today’s recipe. Loaded with a confetti of veggies and a few strategic condiments, every bite is an explosion of technicolor flavor in your mouth.
Killer Technicolor Veggie Sandwich
While you’re joining me in the eternal struggle of will-power, I highly recommend Dave’s Killer Bread with 21 Whole Grains and Seeds. Puree the avocado and then mix in the cilantro lime dressing and kalamata olives.
Spread half of the avocado mixture on the first slice of Dave’s Killer Bread.
Add a layer of half of the bell pepper slices and all of the red onion slices.
Top with the cheddar cheese slice.
Place the next slice of bread on top and spread the rest of the avocado mixture.
Add a layer of radish slices and shiitake mushrooms.
Drizzle the mustard on top and add the last layer of leftover bell pepper slices.
Complete the sandwich with the last bread slice and enjoy!
