There are ironies in life that are simply cruel. A jeweler’s kid who doesn’t like diamonds. A lactose intolerant ice cream shop owner. A wanderlusting world traveler with a deathly fear of flying. Or a recipe developer who’s daughter is a picky eater. Yup, that last one is me. I also have a traveling soul trapped in an aviophobe’s body, but that’s a whole other post (it’s a flying coffin, people!). There is no one more cursed than a professional foodie whose kid won’t eat anything. Okay I am probably being a bit dramatic, but every parent knows that the mealtime struggle is real. How in the world are we supposed to get these little food tyrants to eat something of nutritional substance?! That is why I was thrilled to team up with Somersaults Sunflower Seed Snacks and create today’s Cinnamon Crunch Fruit Jellies.
For those of you unfamiliar, Somersaults Sunflower Seed Snacks are a wonderful munching option. With sunflower seeds as the #1 ingredient, they are a great source of protein, fiber, and healthy fats. Plus they are 100% nut free, so you won’t have a PTA inquisition on your hands if you send these in your kid’s lunchbox. So with a dream in my heart, I set out to create a wholesome and delicious recipe that would trick my daughter to snack on something of substance. The result? Cinnamon Crunch Fruit Jellies. The colorful bites look like fun, but they’re actually little fruit and protein bombs in disguise. Gotcha, Munchkin! Let’s get to it…
CINNAMON CRUNCH FRUIT JELLIES
20-24 Somersaults Sunflower Seed Crunchy Bites (Cinnamon)
1 cup of blackberries
1 cup of pomegranate juice
2 envelopes of unflavored gelatin
In a small bowl, mash 1 cup of blackberries using a fork. Pour the mashed blackberries in a small saucepan and bring to a simmer over medium heat.
In a medium bowl, mix 2 envelopes of unflavored gelatin and 1 cup of pomegranate juice thoroughly.
Add the simmered blackberries to the bowl with the gelatin and juice. Mix thoroughly.
Pour the mixture into the cavities of a mini muffin silicone mold.
Top with a Cinnamon Somersaults Sunflower Seed Snacks and refrigerate for approximately 2 hours or until solid. Enjoy!
