Rice Crispy Treat Cake For most people, a Sweet 16 celebration is about coming of age and (largely) learning to drive!  But for beautiful Brittany, this birthday celebration holds a much deeper meaning… it marks 7 years being cancer free.  This lovely young lady has lived through some unimaginably trying times and has come out the other end.  To mark this extraordinary day, she was treated to an ethereal day in the woods. Photographer Courtney Lovestrom introduces us to this remarkable young woman:

Brittany isn’t you ordinary 16 year old. She was diagnosed with non Hodgkin’s lymphoma at the age of 7. She faced it head on and inspired a whole community with her strength. She was also the inspiration and partner for a local fundraiser that donated 24,000 dollars to a local chemotherapy clinic. Turning 16 represents her being cancer free for 7 years. Needless to say this 16 year old girl has a lot to celebrate, she has done more in her time here than some do in a lifetime. I’m so proud to not only be her personal paparazzi, but her friend.
 
With Brittany’s sweet 16 just around the corner we knew we had to make her photo session extra special. A close friend of mine had just gotten married and had flowers left over from the wedding. It was the perfect opportunity to do a styed session for this amazing young lady. I teamed up with Lisa Bish from a Piece of Lisa Photography to make this session perfect for her. With flowers galore I put together a headpiece, and draped the swing top to bottom. A simple but fun ricekrispy cake and some sweets were all we needed to put this session together for this beautiful girl.
 
TIERED RICE KRISPIE CAKE 
 
INGREDIENTS
  1. 9 tablespoons of butter
  2. 12 cups of mini marshmallows
  3. 18 cups of rice krispies cereal
  4. 2 cups of marshmallow frosting
INSTRUCTIONS
  1. Grease the insides of 6 inch round, 8 inch round, and 9 inch round pans. Carefully line with parchment paper, using the greased inside as the glue.
  2. In large saucepan melt 3 tablespoons of butter, stirring continuously so as not to burn. Add in 4 cups of marshmallows over low heat until fully melted and mixed with the butter. Then mix in 6 cups of the rice crispy treats. Mix thoroughly.
  3. Pour the mixture into the first lined pan and compact the treats as much as possible. Repeat steps 2 and 3 until all of the pans are filled.
  4. Let set and cool for 1 to 2 hours. Carefully remove from the pans. Generously glob about 1/2 a cup of marshmallow frosting onto the center of a cake stand. Place the 9 inch tier on top of this and press down. Continue the tier bonding with the marshmallow frosting for the rest of the layers.
  5. Decorate the tiered cake with ribbon and flowers of your choice. Enjoy!
