With sunshine, sand, and surf, summer brings with it something else… guilt. You know, the guilt you feel when you want to dive into that super fruity drink poolside or that refreshing ice cream on a sweltering day. Guilt because it’s also swimsuit season and a time when you are wearing the least amount of clothing for the year. So you want to splurge, but you also want to be healthy. I know because I am currently in this quagmire myself. Well my friends, life is too short to not enjoy yourself a bit. So let’s find a compromise between yummy and fit, shall we? I have teamed up with Bolthouse Farms® to bring you a delicious summer recipe that will not bust your waistline. One of my favorite summertime splurges are healthy (albeit, spiked) fruit popsicles. They have all the nutrition of a fruit smoothie, the coolness of ice cream, and all the goodness of boozy decadence. So, using Bolthouse Farms’ Mango Piña Colada juice, I have created a spiked popsicle to help you through the hot summer months.
Not only is this recipe quite yummy indeed, it is super easy to throw together in a pinch. First, thoroughly mix together 1 1/2 ounces of coconut rum with 2 cups of Bolthouse Farms Mango Piña Colada juice.
The best part about this recipe is that if you are not too keen on Mango Piña Colada, Bolthouse Farms offers a range of juices, smoothies, protein shakes to choose from. Other new flavors are: Berries and Green Veggies, Raspberry Blood Orange, Banana Honey Almond Butter, Coconut, and Strawberry. As an extra bonus to making healthier choices, the beverages are all gluten free, have no added preservatives, no artificial flavors, and no high fructose corn syrup. So, once you have selected your juice and mixed it with the booze, it’s time to pour it into the popsicle mold. Fill the mold mostly full, leaving a little room at the top.
Then carefully add the chopped pineapple (or any fruit of choice, for that matter) to the mold. Be careful not to plop the fruit in or disturb the popsicle stick.
Freeze overnight (or a minimum of 4 hours) and then enjoy!
