I have a secret to admit that I am ashamed of. I am in a dinner rut. That’s right, in my family we have four dinner dishes that are constantly on repeat. Now before you get all my-cooking-is-holier-than-thou on me, don’t pretend that you’re not doing the exact same thing. I can see your downcast eyes and slightly flushed cheeks! But, hey it is an easy trap to fall into… you rush to the market without an ingredient list so you just buy the stuff you need for the three to five different meals you already have memorized. And so the table turns once again on another week of the same boring dinners. Well take my hand and let’s venture out of this purgatory of Groundhog Day meals. It’s time to have some fun! Now before you start thinking I’m going to throw some crazy-complicated dinner at you and you decide instead to surf on over to Tastemade to watch a mesmerizing icebox cake being made, hear me out! I’ve got a super simple recipe for you today. And the plus? It’s delicious! I’ve teamed up with Hungry Jack to break the conventional bonds of hashbrowns and creatively add them to your dinner repertoire… be free little shredded potatoes! How does waffle-iron hashbrown sandwiches sound to you?!
Fill the Hungry Jack Original Hashbrown Potatoes carton with water up to the designated line. Let stand for 12 minutes. Drain out the excess water. In a medium mixing bowl, whisk the 2 eggs thoroughly.
Pour the contents of the Hungry Jack Original Hashbrown Potatoes box into the bowl and mix well with the egg.
Heat a waffle-iron on high and then add the mixed hashbrowns to the iron. Cook for approximately 15 minutes (or until golden brown).
While the hashbrowns are being cooked on the waffle-iron, cut the beefsteak tomato into large slices and grill lightly on a skillet.
Once the hashbrowns are cooked, create your sandwich by using the waffles as “bread” and adding the tomato, cheese, and chives. Enjoy!
